The Coogee Pavilion bar restaurant design is unique in keeping with the hospitality company owner’s requirements. Located at the northern end of Coogee Beach, the venue faced its own challenges. These included building near the beach, being adjacent to environmentally sensitive watercourses and working in a fully operational restaurant from 7am to midnight every day.
The greatest challenge to the builder was the limited construction period, limited documentation and a fluid documentation process that required specialist craftsmen with meticulous attention to detail. 
At stripout, works were a discovery and display exercise. Templates were used to allow for off-site fabrication and time saving. Samples and prototypes allowed detailing to be resolved, particularly for steel awning windows and bar joinery. Services were a challenge as the original building was old and heavily dilapidated.
This was a very complex refurbishment with unique requirements. It is a credit to all parties concerned that the finished works to the ground and top floors (the middle floor is awaiting brief) have been completed to provide this unique and interesting venue.
